Strawberry Coconut Overnight Oats

Overnight strawberry coconut oats.

Some evenings food prep is necessary when you know you’ve got a big morning ahead.

overnight oats are oftentimes the perfect solution! And there are so many variations that they never, ever become boring. 🤷🏼‍♀️

These are simple blended overnight oats made from:

1 cup gluten free whole oats

1 cup coconut milk

2 tbsp filtered water

1/2 tbsp honey (maple works for strict vegans)

10 strawberries

1 banana sliced

Seeds from 1 vanilla bean

Instructions:

I just mixed all the ingredients together and put them in a glass jar overnight in the fridge.

In the morning I blended everything with an immersion blender and served with blueberries, coconut flakes and edible flowers 🌸
