Strawberry Chia Pudding

​I spent last weekend at @eremitohotel in #Umbria and had the joy of cooking for a number of travelers between nature hikes, yoga and silence. 🧘🏼‍♀️

This is a photo of #strawberry #chiapudding that I prepared for breakfast one morning.

The chia pudding was made the night before with:

Black chia seeds

Fresh strawberries

Oat milk

Rice milk

Maple syrup

And decorated with: sliced strawberries and mint leaves.

To make the #chia pudding:

Take 1 cup of chia seeds to two cups of liquid/plant based milk (the quantities are exact- I generally add more or less liquid by checking the consistency the first half hour.) make sure to whisk the chia with the liquid constantly until fully mixed.

I then blended about 2 cups of fresh strawberries and added the purée to the mixture along with enough maple syrup until it reached the desired consistency.

Continue for at least a half hour whisking every 5 minutes otherwise you risk the chia clumping in the pudding.

Once the chia has absorbed the liquid, cover the bowl and place in the fridge until serving.
