Black rice soba with peas (pasta dish)

โ€‹Ok so maybe I went a little overboard with the pasta yesterday but damn, it was good. ๐Ÿ ๐Ÿ˜Š

Because of my recent hectic travel schedule, my pantry and fridge are relatively empty however- I did happen to find some frozen peas and black soba noodles. So I made this ๐Ÿ‘†๐Ÿป beauty right here.

This is a pretty simple (and far too abundant- but we ate it in 2) pasta dish.

The noodles are made of black rice (I get them in any oriental or health food store) and are cooked according to package instructions.

I then sautรฉed some Tropea onions in olive oil with chili flakes and added peas (fresh or frozen work). When the peas are soft and fragrant, mix them into the pasta with some fresh extra Virgin olive oil and a few more chili flakes.

I also sprinkled it with some nutritional yeast for extra flavor et voila.... lunch!

Pretty simple, no?

Living in Italy- we really do eat a lot of #pasta ... however, as you can see, it doesnโ€™t necessarily have to be full of empty carbs or cheese.

This is one of the many inventions Iโ€™ve come up with throughout the years and is a winner every time. โœจ
