Sweet Potato & Orange Summer Salad

​Summer salads.

I love salads all year long but NOTHING is better than a fresh colorful salad after a morning at the beach.

Today's lunch consisted of a massive salad made of:

Local rocket leaves

Roasted sweet potato chunks (tossed with olive

oil, Himalayan salt and cracked pepper)​

Sliced red bell peppers

Orange slices

Toasted sunflower seeds

And everything was tossed with a dressing I whipped up made of: 

Lemon juice, extra virgin olive oil, apple cider vinegar, honey (maple syrup or agave for strict vegans), Himalayan salt and cracked black pepper.

Good start to a great weekend
