Curried Baby Eggplant

​So I found these "melanzane a grappolo" (baby eggplant clusters) in the supermarket and OBVIOUSLY I bought them. They've been tormentone me ever since. I've cooked them a few ways but this was by far the best.

They are curried and sautéed and make an excellent side dish. 😊

Recipe:

15 baby eggplants 🍆🍆🍆

2 tbsp curry powder

2 tsp #turmeric powder

1 1/2 tbsp coconut oil

About 2 tbsp chickpea flour

Pinch of Himalayan salt

Extra oil for frying

Instructions:

Make a paste with all the ingredients except for the eggplant. Slit the bottom of each eggplant 🍆 in an ex (a cross) and spoon the paste into the bottom. Heat a little coconut oil in a pan over low heat and place the eggplant in to sauté. Pour a small amount of water into the bottom of the pan (about 1/4 cup) and cover. Stir every so often. Add a bit more salt and the leftover curry paste. Uncover and stir. Sauté until all the water has evaporated and the 🍆 is browned.
