Quinoa Stuffed Peppers
Quinoa veggie stuffed #peppers
How to fill a lot of tummies with nutritious delicious food? Make these. 👆🏻
Ingredients (for 6 ppl):
1 cup quinoa
2 cups water
Juice of one lemon
Handful fresh herbs
1 handful sundried tomatoes
3 large bell peppers
Extra virgin olive oil
Halve the peppers and remove the seeds. Rub with olive oil and bake in the oven for about 15 minutes at 180C/350F.
Meanwhile, bring the quinoa and water to a boil in a medium sized pot over medium heat. Once boiling, add the lemon juice, herbs and a pinch of Himalayan salt. Reduce heat, cover and boil for about 10 minutes or until the quinoa has tails (google this its a thing I swear!)
Slice the zucchini into small pieces and boil until fork tender. Slice the sundried tomatoes and boil them for about 5 minutes as well- and drain both the zucchini and sundried tomatoes. Once the quinoa is ready and fluffy, add in the zucchini and tomatoes. Test for salt and add more olive oil. Stir.
Fill the peppers with the quinoa and pour a bit more olive oil on top. Place back in the oven and bake for about 25-30 minutes or until the tops have browned.
I served these with a sprinkling of rocket salad and a tahini/lemon dressing.
