Chocolate and Vanilla Baked Doughnuts with Rose Glaze and Chocolate Sauce

I posted these doughnuts (chocolate and vanilla baked gluten free vegan obviously) on my instagram feed the other day and due to the number of recipe requests, I decided to quickly come up with a blog post- as opposed to individually sending out the recipe.

 

I had to make both chocolate and vanilla because I was working on a vanilla doughnut recipe and my daughter insisted that her doughnuts were chocolate. So I improvised and added some cacao to make her happy. It worked. Luckily. All info below...

So here you go:

Doughnut ingredients (for 6)

1 cup gluten free flour blend (I make my own with rice flours, various starches, etc....but it can easily be bought)

1 1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp Himalayan salt

1/2 cup full fat coconut milk

1 1/2 tsp Apple cider vinegar

1/3 cup unrefined coconut sugar

3 tbsp melted vegan butter

Seeds scraped from 1 vanilla bean

Add in for chocolate doughnuts:

1/4 cup cacao powder (plus 1 tbsp more coconut milk)

Instructions:

Preheat oven to 200C (400F).

Wipe standard doughnut pan with coconut oil or vegan butter.

Sift together flour, baking powder, baking soda and salt. In a separate bowl, mix together the coconut milk and vinegar and let rest about 5 mins or until curdled. Add in the coconut sugar, melted butter and vanilla. Then, stir in flour mixture until just combined- don’t mix too much

Split the batter into two bowls. In the second bowl, stir in the cocoa powder and add the tbsp of extra coconut milk if it needs more moisture.

Spoon the batter into the doughnut molds (3 chocolate and 3 vanilla

Bake the doughnuts for 16-18 minutes or until thoroughly baked through.

Flip onto a cooling rack and let cool completely.

Now: for the decorations. I sort of just invented as I went along so I don’t have a specific recipe. However, for the rose glaze, I used coconut oil, cocoa butter, maple syrup and dried rose petal

Powder. I just heated everything together in a Bain Marie, mixed and dipped the doughnuts.

For the chocolate sauce:

1/4 cup coconut oil

1/4 cup cocoa powder

2 tbsp maple syrup.

Pinch Himalayan salt

Instructions:

Heat and stir in a small pot over low heat. And pour over the doughnuts.

As you can probably tell from the photo, there are various other toppings: cacao nibs, dehydrated coconut, rose petals and rose petal powder as well....just what I had lying around! 🥀
