This is a salad perfect for a summer day with a nice balance of sweetness from the fruit, savory flavors and acidity.
Additionally, it is relatively simple to make:
Rocket leaves tossed in extra virgin olive oil, Himalayan salt and a dash of fresh lemon juice
Purple cabbage massaged with lemon juice, olive oil, black pepper and
Gilled zucchini slices
Thinly sliced tropea onion
And decorated with flowers for a little extra beauty.... because you can never have too much beauty, am I right?
