Easy Vegan Chocolate Chip Cookies
Here's a quick recipe for really good, really easy
VEGAN, GLUTEN FREE AND REFINED SUGAR FREE chocolate chip cookies.
2 cups almond flour
1/4 cup + 1 tsp soft coconut oil (not solid and not totally melted)
3 tbsp maple syrup
1/2 tsp bicarbonate (baking soda)
Seeds scraped from 1 vanilla pod
A generous pinch of Himalayan salt
1/2 cup chocolate chips (I used Sunspire fair trade brand brand dark chocolate vegan chocolate chips- but oftentimes I use my own)
Preheat oven to 180C/350F. In one bowl mix together the dry ingredients. In another bowl, mix the wet ingredients. (Leaving the #chocolatechips until the end). Pour the wet ingredients into the dry ingredients and mix well. Add the chocolate chips. Form into small balls (this recipe generally yields about 12 cookies).... place on a baking tray lined with parchment paper. Bake for 8 minutes. Take the tray out of the oven and let cool completely. Enjoy!!!
