Chocolate chip Cookies (Same same, but different)

Here’s an easy recipe for delicious gluten-free vegan cookies.

Ingredients:

1 1/4 cup almond flour

1/3 cup gluten-free flour blend (I make mine out of rice flours and different starches- no gums!)

1/2 tsp baking powder

1/4 tsp Himalayan salt

1/3 cup coconut sugar

1/4 cup aquafaba (chickpea brine... I know, I know...it works!)

3 Tbsp coconut oil

Seeds scraped from one vanilla

1/2 cup chocolate chips (I ALWAYS use @lilys_sweets_chocolate 🍫

Instructions:

In a bowl, mix together the almond flour, gluten-free flour, baking powder, salt, and sugar. Set aside.

In a separate bowl, beat aquafaba using a handheld or electric mixer until light and fluffy. Add the melted coconut oil to the aquafaba and whisk to combine. Add the aquafaba mix to the dry ingredients, stir in the vanilla and mix until just combined. Finally stir in the #chocolatechips

Loosely cover and chill in the refrigerator for half an hour. Preheat oven to 375F/190C.

Scoop out 1/4 cup amounts of dough and place onto a lined baking sheet.

Bake for 12-14 minutes or until golden brown. Let cool, serve and enjoy! ✨🍪✨
