Blueberry Breakfast Bars

Working with my new kitchen set by @victorinoxitalia and was inspired to bake these blueberry breakfast bars.
(I know, I know… they’re supposed to be “breakfast” bars but I ate them for dessert and then some for lunch 😆 🫐)
Ingredients:
1 cup oats
1/2 cup oat flour
Pinch sea salt
1/4 tsp baking powder
1/3 cup coconut sugar
1/3 cup oil (both coconut and olive oil work)
2 cups blueberries
1 1/2 tsp cornstarch
1 tbsp maple syrup
Instructions:
Preheat the oven to 180C/350 F. Prepare a pan with parchment paper. In a bowl, stir together the oats, flour, salt, baking powder, and coconut sugar. Stir in the oil, then press 2/3 of the dough into the prepared pan, reserving the rest of the dough. In a separate bowl, stir blueberries, starch, and 1 tbsp maple syrup. Press this mixture on top of the dough in the pan, then sprinkle the remaining dough on top. Bake 35 minutes. Let cool, then refrigerate at least 1 hour before. Store in fridge in airtight container.
