Apple Pie Pancakes

​Apple pie cinnamon pancakes.

That’s what’s up.

It’s hot right now in Rome. Boiling. Too hot to go outside with my under the weather daughter so we spent the day inside....cooking. And amongst the numerous goodies we made (and ate), breakfast was a stack of apple cinnamon #pancakes

Really simple to make and a delicious breakfast or #brunch idea!

Ingredients:

1/2 cup gluten free oat flour

1/2 cup quinoa flour

1/4 cup unsweetened almond milk

1/2 cup unsweetened applesauce

1 tsp ground cinnamon

Pinch nutmeg

Seeds scraped from 1 vanilla bean

1 tbsp baking powder

1 tbsp apple cider vinegar

1 tbsp maple syrup

1/4 tsp Himalayan salt

Coconut oil/vegan butter for frying

Instructions:

In a small bowl, mix the apple cider vinegar in with the almond milk and set aside for about 5 minutes. In a medium mixing bowl, add all the dry ingredients and whisk together. Add in the rest of the ingredients and then the vinegar and milk mixture. Mix well until a homogenous batter has formed and let sit for 5-7 minutes until the dough has thickened.

Heat a pancake pan or griddle over high heat and wipe with either coconut oil or vegan butter. Once the pan is hot, pour the batter in the pan, using about a 1/4 measuring cup as a scoop. Cook for 1-2 minutes or until golden brown and flip. Cook for another 1-2 minutes on the other side. Should be fluffy and thick.

Repeat and serve.

I served these with vegan butter, maple syrup, banana rounds and dried flowers. 

(But if you really want to make this an “apple pie” stack.... serve with apple butter and sprinkle with cinnamon and a scoop of vanilla (vegan) ice cream!!) ​
