Chocolate Chip Cookies - another recipe…(never gets old!)

New year- Old classics. Cookies and milk. 🍪 🥛 vegan chocolate chip cookies & plant-based milk that is. What’s better than that? I am also lucky enough to be working with one of my favorite brands: @lilys_sweets_chocolate so I used a LARGE amount of their stevia sweetened non-GMO baking chips in the dough. These are some of the easiest and YUMMIEST #glutenfreevegan chocolate chip cookies we’ve made in a while. No joke. Here’s the full recipe- (this will make about 16 cookies give or take- depending on size and how much dough you manage to eat before they actually go into the oven 😳😁)

Ingredients: 2 cups (GF) oat flour 1 cup coconut sugar 1 tsp baking soda Seeds scraped from one vanilla bean 2 generous pinch of Himalayan salt 1 cup vegan baking chips 1/4 cup coconut oil 2 tbsp almond milk 2 tbsp coconut milk Instructions: Mix all the ingredients in a bowl and set in the fridge for 1-2 hours Preheat the oven to 160C (325 F) and once the dough is cold, form medium cookie sized balls, flatten a bit and place on a lined baking tray. Bake for 12 minutes and let cool for at least 20. 🍪🥛🍪 I served these with homemade #almondmilk and EXTRA #chocolatechips And as usual- that’s my daughter’s little hand getting into the cookies before I actually get to photograph them. 🤷🏼‍♀️🍪 FYI- the dough is pretty good too. And guess what? Since it’s vegan- you can eat it raw !!!!! I mean, HELLO COOKIE DOUGH! Sweet love my friends. ❤️
