Simple Blueberry Pancakes

I love pancakes. Therefore, I make A LOT of pancakes.

One day I’ll post a list of my top recipes but for today, I’ll share one of my favorite recipes for blueberry pancakes. It’s VERY easy so don’t get intimidated- and they come out delicious (and kid approved) every single time. (And maybe this will sweeten up your Monday! 😉)

Gluten free vegan blueberry pancakes

Ingredients:

1 cup gluten free flour (I make my own mix with rice flours and a couple different starches)

1 tbsp ground flaxseed

2 tsp baking powder

2 tap ground cinnamon

Seeds scraped from 1 vanilla bean

1/4 tsp Himalayan salt

2 tbsp maple syrup

1/4 cup unsweetened applesauce

1 cup unsweetened almond milk

1/2 cup blueberries

Instructions:

In a medium bowl, sift and mix the flour, flax meal, baking powder, cinnamon and salt. In another bowl, mix the maple syrup, vanilla, applesauce, and milk. Pour half of the liquid mix into the dry ingredients and stir. As you stir, continue adding the liquid ingredients until a good consistency is reached. Make sure the batter doesn’t get too runny. Once the batter has become a homogenous mixture with no lumps, fold in the blueberries... make sure not to squish them! 😀

Heat a small pan or pancake griddle and pour about 1/4 cup of the batter for each pancake - cook for 1-2 minutes on each side or until golden brown , begin to cook the pancakes, using about 1/4 cup of the batter for each one.
