Lentil & Zucchini Salad with Tahini Miso Dressing

Lentil and vegetable salad ingredients:
2 cups cooked and cooked brown lentils
2 shaved (julienned) carrots
2 cucumbers sliced
4 chopped celery stalks
2 large handfuls rocket lettuce
1/2 avocado sliced small
Mixed toasted seeds

Dressing: tahini, rice miso, tamari, extra virgin olive oil, lemon juice, maple syrup, water

Instructions:
Mix together the dressing elements and add water until the desired consistency is reached. (This is great as a dip too!)
Toss half of the dressing with the lentils and set aside.
Toss the rocket with lemon and olive oil And set aside.
In a large bowl, mix together the lentils, lettuce, vegetables and remaining dressing. (I use my hands 🀚🏻)
Adjust salt to taste (you won’t need much because the miso and tamari and very salty)
Serve on a plate with the avocado pieces and a sprinkling of toasted seeds.
