Chocolate Caramel Thumbprint Cookies
Chocolate thumbprint cookies with sugar free “caramel” filling.
It seems we’re all about cookies lately. Which is ok. (I keep telling myself). It’s always a good time for cookies. Am I right?
I made these cookies with #sunflower seed butter as one of the main ingredients. I found about 3 bags of sunflower seeds that I had to use up in the cupboards. So I did.
In all honesty, I’ve had better cookies- so I’m going to spare you guys the recipe (unless you DM me and specifically ask me for it) here HOWEVER- the caramel filling was insane! And it was so simple as well...
So you get that! 😉
Ingredients vegan refined sugar free caramel sauce: (recipe can be doubled for more filling)
1 cup pitted dates
1/2 coconut nectar
1/2 full fat coconut milk
Seeds scraped from 1 vanilla bean
Pinch Himalayan salt
Combine all ingredients and blend (I used my vitamix but any high speed blender should work.
Blend on high until smooth and creamy. You can adjust the consistency by adding more coconut milk if it is too thick.
And that’s all there is too it!
